Jill’s Apple Pie

This is my friend Jill Rowe’s favorite apple pie recipe. It was the most popular dessert that she made when she owned and ran a local restaurant, The Kitchen, near my home in upstate New York.

CRUST

2 cups all-purpose flour

½ teaspoon salt

2/3 cup solid vegetable shortening, chilled and cut into small pieces

4 tablespoons (½ stick) unsalted butter, chilled and cut into small pieces

5 tablespoons ice water

FILLING

¾ cup sugar

2 tablespoons all-purpose flour

½ teaspoon cinnamon

1/8 teaspoon nutmeg

1/8 teaspoon salt

6 cups sliced tart green apples (preferably Granny Smith)

4 tablespoons (½ stick) unsalted butter, chilled and cut into small pieces
