1. Preheat oven to 350°F. Line baking sheet with foil.

2. In a bowl, toss beet slices, olive oil, garlic, and salt.

3. Spread beets on prepared baking sheet and roast for 30 minutes.

To assemble the burgers:

hamburger buns (appendix)

roasted beets

mayonnaise (appendix)

heavy metal burgers

arugula

1. Toast the bread in the oven at 350°F for 1 minute. Top bread with two or three slices of beet. Add a tablespoon of mayonnaise, burger, and garnish with plenty of arugula.

Black rice burgers

with asparagus, mushrooms, and mustard vinaigrette

To make black rice burgers:

water

1 cup black rice

1 red onion

8 ounces tofu

3 tablespoons tomato paste

2 tablespoons breadcrumbs

salt and pepper | olive oil
