Pumpkin Bran/Flax Bread

Are you craving some All-Bran cereal? Say no more—I’m going to do you two steps better and add some ground flaxseed and pureed pumpkin as well. This way you II get a boost of fiber, carotenoids from the pumpkin, and a small dose of ground flaxseed. The recipe makes two loaves, so make sure you have plenty of room in your freezer.

Canola cooking spray 2 ½ cups

unbleached flour, plus more for dusting ½ cup ground flaxseed 1 ½ cups shredded bran cereal

(Kellogg’s All Bran cereal works great)

2 teaspoons baking soda

1 ½ teaspoon salt

1 ¼ teaspoons ground cinnamon

1 teaspoon ground allspice ½ teaspoon ground nutmeg

2 teaspoons baking powder

2 eggs

½ cup egg substitute or 4 egg whites

1 ¾ cups sugar ¾ cup buttermilk

2 cups canned solid pack pumpkin

⅓ cup canola oil ⅓ cup reduced-calorie pancake syrup or maple syrup)

½ cup chopped pecans (optional)
